Baked Alaska Devon Cream

Ingredients:

  • 1 sponge flan case
  • 2 tablespoons sherry
  • 2 tablespoons apricot jam
  • 1 can apricots
  • 8 ounces Double Devon Cream
  • 3 egg whites
  • 3 ounces confectioner's sugar

Preparation:

  1. Place the sponge flan case on a baking sheet.
  2. Sprinkle with sherry and spread the inside with jam.
  3. Drain the apricots and arrange half in the flan case.
  4. Spread the Double Devon Cream onto the apricots and top with remaining apricots.
  5. Whisk the egg whites stiffly.
  6. Beat in half the sugar and fold in the remainder. Spoon onto the flan and fork into peaks.
  7. Bake at 425 degrees Fahrenhiet for 2 to 3 minutes and serve.
