Marinated with rosemary and thyme

Preparation time : 10 minutes (plus marinating time).

Cooking time : 5 minutes.

makes 4 cups.

Ingredients

  • 200g green olives
  • drained 200g black olives
  • drained 2 tablespoons fresh thyme
  • 1/3 cup fresh rosemary
  • 2 cloves garlic, sliced thinly
  • 21/2 cups (625ml) olive oil
  • 1/2 cup (125ml) lemon juice

Preparation

  1. Layer olives. herbs and garlic into hot sterilized 1-litre (4 cup) jar.
  2. Gently heat oil and juice in medium saucepan; do not boil. Pour enough of the oil mixture into jar to cover olives. leaving 1 cm space between olives and top of jar; seal while hot.

Per serving - 17.3g fat; 727kJ

Store - Recipe best made 3 days ahead; can be refrigerated for up to 3 months.

Tip - Oil will solidify on refrigeration; bring to room temperature before serving.
