Cauliflower in Schezuan Sauce

Preparation time :: 20 minutes.
Cooking time :: 15 minutes.
Serves :: 6.

Crunchy and yummy.

Ingredients.

  • 500 grams cauliflower florets.
  • salt to taste.
  • oil for deep frying.
  • To be mixed into a thick batter -
  • 4 tablespoons plain flour.
  • 2 tablespoons corn flour.
  • 1/2 tablespoon oil.
  • a little water.
  • Other ingredients -
  • 1/2 teaspoon chopped garlic.
  • 1/2 teaspoon finely chopped ginger.
  • 1/2 teaspoon finely chopped green chillies.
  • 1 tablespoon chopped spring onions.
  • 3 to 4 tablespoons Schezuan sauce .
  • 1 tablespoon oil.

Preparation.

  1. Dip the cauliflower florets into the batter and deep fry over a high flame until crisp.
  2. Heat the oil in a wok or frying pan on a high flame. Add the garlic, ginger and green chillies and stir fry over a high flame for a few seconds.
  3. Add the spring onions and fry again on a high flame for few seconds.
  4. Add the Schezuan sauce and fried cauliflower florets and toss well. Add a little water, if the sauce is thick.
  • Serve hot.
