Cauliflower in Schezuan Sauce
Preparation time :: 20 minutes.
Cooking time :: 15 minutes.
Serves :: 6.
Crunchy and yummy.
Ingredients.
- 500 grams cauliflower florets.
- salt to taste.
- oil for deep frying.
- To be mixed into a thick batter -
- 4
tablespoons plain flour.
- 2
tablespoons corn flour.
- 1/2
tablespoon oil.
- a little water.
- Other ingredients -
- 1/2
teaspoon chopped garlic.
- 1/2
teaspoon finely chopped ginger.
- 1/2
teaspoon finely chopped green chillies.
- 1
tablespoon chopped spring onions.
- 3 to 4
tablespoons Schezuan sauce .
- 1
tablespoon oil.
Preparation.

Dip the cauliflower florets into the batter and deep fry over a high flame until crisp.
- Heat the oil in a wok or frying pan on a high flame. Add the garlic, ginger and green chillies and stir fry over a high flame for a few seconds.
- Add the spring onions and fry again on a high flame for few seconds.
- Add the Schezuan sauce and fried cauliflower florets and toss well. Add a little water, if the sauce is thick.
